Place the 8 dates in almost boiling water for 3-4 minutes.

Mix the oatmeal with the spices and chopped nuts (I like them to be noticeable so I leave the big pieces).

Mash the dates with part of the soaking water to obtain a puree.

Mix the date puree and the EVOO with the oatmeal, nuts and spices and stir well. If you see that there are dry oats, add a little more EVOO (but with these quantities should be enough).

Spread on the oven tray and bake at 180°C for about 40min (depending on the oven it may vary).

Stir from time to time so that the edges do not burn.
