Preparación de la receta

Cut onion into julienne strips and garlic to taste and sauté in oil over medium heat. Set aside on a plate.

Cut the liver into small pieces, salt and sauté in the same pan used for the onion.

Add the onion and garlic sofrito to the pan with the liver. Mix.

On one side of the pan pour a spoonful of flour with a little oil. Cook for a few seconds and add the broth, which will thicken with the flour as it boils. Finally mix everything.

Chop the parsley and add it together with the wine, better if it is an oloroso wine, let the alcohol evaporate and serve.
