Let me clarify a few things before I start: ✳️ I used a purple smoothie I made to dye the cauliflower. I added more water to reach the liter because I wanted to make enough loaves. If you want you can make less with half the ingredients. ✳️ The bread flour I used is Farmhouse flour from shär. ✳️El amaranth I buy it in seed form and grind it at home. ✳️El smoothie takes 100g of blanched red cabbage and 2 handfuls of frozen blackberries. Then I also added 2 purple potatoes and blended it well. Then I added salt, oil and vinegar and heated it a little to 40 °.

Mix the flours and yeast in a bowl and then add the batter.

Mix well in the bowl (I could not fit so much in the Thermomix 😅) with a spatula and knead. Transfer to the molds , sprinkle with sesame seeds and let ferment 1 hour.

I baked the ⭐ loaves in the Airfryer for 15 minutes at 180°.

The others in the oven at 200° for 30 minutes for the dumplings and 45 minutes for the big one.

When they are lukewarm unmold them. I leave some to keep in the fridge for a few days (at room temperature they never get moldy right away because gluten-free breads carry a lot of water) and others I bag them and put them in the freezer.

In spite of being a new experiment, they were super soft and fluffy and tasted great too 😍😍😍😍😍😍😍😍😍.
