Sauté the garlic and onion in a frying pan with 1 tablespoon of extra virgin olive oil until translucent ⠀.

Add the cabbage cut into strips, sauté for 5 minutes. Then add the water and cook covered over medium heat 10-15 minutes until tender and no water remains. ⠀

For the crispy ham put 2 thin slices of ham between two pieces of paper towels on a plate. Microwave for 1-2 minutes until toasted and crispy. Let cool and set aside.

Add the paprika to the cabbage and stir well. Put the 3 eggs making some grooves in the sauté. Put the lid on and leave for 3-4 minutes until they set.

Serve with the crumbled crispy ham on top and a sprinkling of parsley. ⠀
