Roast the bell pepper and eggplant until soft 45-60 min in the oven. It can also be done in the air fryer, but it will take less time. In fact the times vary depending on the oven or fryer, so it is better to check. To roast the vegetables I put them whole and brushed with oil. Let them cool.

Cut the crust from the bread slices (I keep it and make breadcrumbs with it, you can't waste anything ;)). Flatten the bread with a rolling pin. Cut each slice into 2 or 3 pieces.

Place the pieces of bread inside a muffin tin to take the shape. I did it with the one in the photo.

Toast the bread in the oven for 5-10 minutes until toasted. Remove and set aside.

Peel the roasted vegetables and cut them into very small squares. Chop the anchovies very small as well. Mix all these ingredients in a bowl and season with olive oil and a little salt (without overdoing it, because the anchovies already have some).

Just before eating, place at the bottom of each basket a little mayonnaise (it can be homemade with oil, egg and vinegar) and on top a little of the previous mixture. It is very important to do this just before serving so that the bread does not soften.
