Chinese rice with onion, spring onion and garlic.

Boil the rice and set aside

Chop the onion very small and set aside. You can also use spring onion, it is finer for sautéing.

Chop the garlic finely and set aside. You can add more garlic, for those who love intense flavors. I usually put 8 cloves of garlic very crushed.

Start sautéing over high heat. In a wook put a little vegetable oil. When it is hot, add the 4 eggs and break them into small pieces. As soon as they are fried, add the garlic and stir for 3 minutes or so. When they start to smell, add the rice and stir. When everything is loose, add a teaspoon of butter and stir. Add the onion and sauté for 5 minutes. Finally add the soy sauce and continue stirring for a few more minutes. For soy sauce lovers, you can add an extra tablespoon of sweet soy sauce, as the other sauce is very salty and thus compensates, or 1 tablespoon of soy sauce and 1 tablespoon of sweet soy sauce. To taste.
