Mix the vegetables with the eggs and add to a frying pan with a drizzle of EVOO. cover and let cook over medium-low heat for 5 minutes and turn over, another 5 minutes and that's it!

If you like it less done, cook for less time by turning it over and turning up the heat a little to brown the base. If you like it more cooked, let the egg set a little longer.
