Roast the pumpkin and carrot and set aside. Cook the quinoa and drain.

In a bowl, mix the pumpkin, quinoa, carrots, lentils and raisins.

In a bowl put the spinach (it would also look good with lamb's lettuce for example). Put the mixture from the bowl on top. Add the orange and the cashew nuts.

I seasoned it with a yogurt sauce containing: soy yogurt, cumin, lemon, garlic powder, oregano and salt.
