Spread the pizza base and spread the tomato evenly.

Add the cheese, either grated or whole distributed, I prefer to put it in slices or cubes rather than grated.

On top of the crumbled sobrasada.

Finally add the eggplant, which we have previously poached very well, in small cubes in a frying pan until it is well browned, add the date paste to caramelize it better. Let it poach until it is ready and add it to our pizza.

Bake in the oven for about 10 minutes and it's ready!
