Soak the azukis the night before with a small strip of kombu seaweed.

The next day, throw away the soaking water and put 1 cup of azukis for every 3 cups of water in a pot, along with the kombu seaweed. It helps to soften them and make them more digestive. Bring to a boil. Cover and lower the heat. Cook them for about 1 hour and a half. *Important*: DO NOT add salt.

Clean, peel and cut the cucumber, radishes, tomato and endive.

Mix them with the rest of the ingredients.

When the azukis are cooked, add them to the rest of the ingredients.

I have dressed it with two tablespoons of apple cider vinegar, one tablespoon of picual olive oil and a squeeze of lime.
