In a bowl grate the zucchini and carrot. Then drain the vegetables with a clean cloth to remove all the water.

Return the grated vegetables to the bowl. Crack the eggs, season with salt and pepper, beat and mix so that everything is integrated. I also add a little bit of cheese in this step 😜.

Spread the mixture on a baking sheet with its paper making a rectangle. I use a rubber spatula to make it uniform.

Bake in a preheated oven at 190° for about 20 minutes (but be careful not to burn the areas that had little mixture).

Remove from the oven (do not turn off). Put the ham, cheese and dates. Roll up with the help of the baking paper and press down.

Put back in the oven for 5 minutes, enough time for the cheese to melt.
