Cut the ingredients: - 1 and a half medium sized onion in julienne strips. - 4 finely chopped garlic - Cut the squid into rings if you buy them uncut, I added 15 rings because mine were frozen.

2. Heat in a frying pan/pan (that has some height so that later when pouring the broth there are no problems) a splash of EVOO and add the garlic. When it is golden brown add the onion. We also add a little bit of salt so that the vegetables sweat. All this at a medium heat. Let it cook for 10 minutes.

3. When we have the onion, add the glass of white wine and let it evaporate.

4. Add the squid, sauté with the rest, with the fire a little higher.

5. Now add the broth. If you prefer you can do it with water, I prefer with broth because it gives more flavor to the onion. Let the whole mixture cook between 20 minutes and half an hour, after 15 minutes check if it needs more water so that it does not get dry. In this step I add turmeric to give it color, and change a little black pepper.

6. When the necessary time has passed, taste and correct the salt and pepper. Remove from the heat and add parsley. If it is fresh, the better!

I accompanied them with white rice, it looks great mixed with the onion, I hope you like it! 🥰
