Pasta with zucchini and tomato with avocado sauce

Boil the water for the pasta. While it is boiling, spiralize the zucchini, dice tomato and make the "avocado sauce".

For the "avocado sauce" mash half a ripe avocado, add chopped fresh or spiced coriander, a pinch of cayenne pepper, pepper, salt to taste, a squeeze of lemon juice if you have it and stir everything very well.

Cook the pasta according to package directions. Drain and toss with the zucchini, diced tomatoes and avocado sauce. Top with a poached egg and serve immediately.

Finally, optional and depending on the diner, grate a little cheese on top.
