The first thing to do is to seal the ribs in a large pot with a good amount of olive oil. When they are sealed on all sides, remove them to make the sofrito in the same oil.

First we add an onion and 3 cloves of garlic, finely chopped. If necessary add a little more oil.

Fry well while chopping the bell pepper and add (do not forget to add salt and pepper).

Peel a tomato, chop it and add it, leaving all the ingredients for about 5 minutes to make a good sauce.

While the sautéing is finished, peel the potatoes and "desgajamos" (it is not chopped but the pieces are pulled off with the help of a knife so that the starch is released better and the sauce thickens).

Add the potatoes together with the ribs to the sauce and add a glass of water together with the spices (cumin, cloves, bell pepper).

Cook over medium-high heat uncovered until the desired texture is achieved and the potato is soft. If necessary, add a little more water.
