Wash the peppers and cut them into strips and roast them in the microwave for about 8 minutes.

Fry the onion in a frying pan with EVOO over medium-high heat for about 15 minutes.

In a bowl, mix the chickpea flour with the water, stirring until there are no lumps. The proportion is one measure of chickpea flour and two and a half measures of water.

In a frying pan with a little AOVE put the amount of a spoonful of the mixture of chickpea flour and water. It will be a fajita of about 15 cm. When the dough is a little done (it moves in a compact way) turn the fajita so that the other side is done.

Cook the chicken breasts in microwave or frying pan by cutting into strips.

Place the vegetables and chicken on the pancakes.

Each serving represents approximately 25 grams of CH, about 2 fajitas.
