Cut 2 medium potatoes and half an onion and cook it as if you were going to prepare an ordinary potato omelette. And clean the inside of the peppers very well, removing all the seeds.

Beat 1 or 2 medium eggs and add the potato and onion.

Spread very little oil on the peppers and fill them with the tortilla mixture.

Seal them as well as possible with Albal paper so that the mixture does not leak out and place them on a baking tray.

Bake at 200°C for about 30-40 minutes.
