In a frying pan, heat the oil over medium heat. Season the chicken thighs with salt and pepper. Fry in the pan until golden brown or well done; remove with a skimmer and set aside on a plate. Keep the juices in the pan.

Add the garlic to the pan and sauté until tender; add the mushrooms, season with salt and pepper and cook until the mushrooms are also tender, about 5-7 minutes.

On low heat, add the cream while stirring well. Let simmer for about 10 minutes while stirring often. Stir in the Parmesan cheese until melted. Season again with salt and pepper if desired.

Return the chicken to the pan and cover with the sauce. Add the parsley on top when serving.
