lightly fry the leek and celery with the oil, heat to 6. When it is golden brown, add the rest of the vegetables and season to taste (I recommend white pepper on this occasion, it goes great).

FROM HERE THE TIMES AND QUANTITIES ARE TO TASTE, DEPENDING ON HOW YOU LIKE THE TEXTURE OF THE CREAM; -If you like it liquid, well mashed (like me) add 400ml of water and cook over high heat (7) with a lid for about 25 minutes and it will be mashed very well with the minipimmer and will look like the photo. -If you like it thicker I suggest adding 250-300ml of water and cook less (15-20 min) and leave lumps.
