Clean the sardines removing the bones and leaving both loins together. Chop 4 of them and leave the others as they are. Set aside.

Chop the onion and sauté it in a frying pan with hot oil. Meanwhile chop the bell pepper and add it to the frying pan. Add salt. When the vegetables are sautéed add the sardines that we have chopped and sauté everything together for a couple of minutes.

Add the chorizo bell pepper pulp and mix well. Add the rice and sauté it all for a couple of minutes.

Pour the fish stock and cook for the time indicated by the manufacturer. I have had it half of the time on high heat and the other half on low heat. When the rice is ready add the 4 sardines that we had reserved, cover with a cloth and let the rice rest. The sardines will be cooked with the heat that the rice gives off.
