In a frying pan with a little oil, cook the onion and when it is done, add the diced Serrano ham.

When this is sautéed to taste, add the cup of quinoa and mix.

To the mixture I add the carbonara sauce previously made: I beat very well 1 egg + a few pieces of fresh cheese + a splash of evaporated milk + salt and pepper (the quantities I add a little by eye and watching how the texture is going to be).

Mix everything together and with the fire off you can sprinkle a little grated cheese on top and that's it.

Pd: I always accompany it with a poached egg.
