We cut the zucchini very finely, I have done it with the same peeler. Then we put EVOO in the pan and pass it with the spices that you like to give it more flavor. I have used curry and sweet paprika. We do step 2 while we check the zucchini and once it is ready we take it out and put it aside.

On the other hand, we take the chickpeas and half an avocado, we carve it and add a spoonful of EVOO, black pepper and sweet paprika. Mix well.

In the same frying pan put the egg and make it as if it were scrambled eggs. Remove it together with the zucchini.

Heat each pancake for 3 minutes.

Cut the tomato and the sheep cheese and put them together with the zucchini and the egg. We also add the lamb's lettuce.

ASSEMBLE: Spread some of the hummus/guacamole on half a pancake and add the mixture. To give it the final touch, add some goat cheese or gorgonzola cheese on each pancake.
