Clean the squid and dry them very well (very important) with absorbent paper.

On a hot griddle or frying pan with a drizzle of olive oil, sear them for about 2 minutes on each side.

On the other hand, chop 3 cloves of garlic and confit in oil to aromatize, reserve and temper. Add squeezed lemon and parsley.

Use this dressing to coat them once they have been plated, with a sprinkling of Maldon salt and ➕ parsley if you like
