Sweet potato and blue cheese frittata

Cut the sweet potato in quarters (to speed up cooking) and boil until cooked (it can also be baked with a little EVOO, salt and pepper, but it takes longer).

Meanwhile, cook the onion in a little EVOO until translucent.

Beat the eggs in a large bowl and add the crumbled blue cheese and the cooked onion.

When the sweet potato is cooked, remove the skin and cut into pieces. Mix with the egg, cheese and onion.

Preheat the oven to 190°. In an ovenproof frying pan with EVOO over medium heat add the mixture from the bowl. Cook for a few minutes until it sets.

Place the pan in the oven for 10-12 minutes, or until ready.
