Wash and peel all the vegetables and cut into medium-sized pieces. Set the potatoes aside.

Dice the veal to taste and brown in the pan.

If you are going to eat it that same day, add the potato now. The calculation is one potato per person, so if there are two tuppers you can add one now and one the day you eat it. Add the vegetables to the veal and cover with water. I like a lot of broth so I usually double the water but if you prefer more fork tenderness, covering is enough. Leave on medium heat for 20'.

You can eat it right away or let it rest for a while. As it is veal, if you let it rest overnight it will be even more tender!
