Pasta with pumpkin and ricotta sauce 馃崫

Turn the oven on at 180掳C.

Peel and cut the pumpkin into small cubes. Cut the leek (in not too small pieces so that it does not burn) and put it at the bottom of the baking tray next to the pumpkin.

Add a good splash of EVOO and leave it for about 20 minutes with the fan on (the oven fan, not the one in your house 馃槈) until the pumpkin is soft.

Meanwhile we put water in a saucepan, when it starts to boil we add the pasta and leave it for 6-8 min. We keep part of the cooking water.

Remove the pumpkin and leek from the oven and mash them together with the ricotta cheese. Add the cooking water until you get the texture you like and season with salt and pepper.

Mix the sauce with the pasta and the dish is ready!

Now all that's left is to sprinkle some grated cheese (we can put it back in the oven to gratinate) and decorate it with some chives.
