Add the cinnamon, the egg, the dash of milk or vegetable drink of your choice and whisk well with the same fork.

Place a frying pan over high heat with a drizzle of EVOO to grease it.

Once hot, pour our "dough" in the center to give it a pancake shape and turn it over and over. 👉🏻TIP: separate them from the pan as they are being made and turn them over with a fork to prevent them from breaking.
