Peel and cut the pumpkin and onion into medium pieces. Peel the garlic

Prepare a baking tray with parchment paper. Add the vegetables. Season with salt and pepper to taste and season with a drizzle of extra virgin olive oil. Bake in the oven for about 30-40 minutes, until the vegetables are tender. Halfway through the cooking time, take out and stir a little.

Allow to cool slightly if desired and mash the roasted vegetables together with the mustard.
