Sauté the vegetables in a frying pan with olive oil for 10-15 minutes until tender, with a pinch of salt and a teaspoon of paprika. Let them rest and cool in the refrigerator for a few hours.

Add to the vegetables one egg, two tablespoons of chickpea flour, two tablespoons of breadcrumbs, the sesame seeds and a little more paprika and salt (to taste). Mix well.

Form small balls and place them on a baking sheet; flatten them a little. Make a hole in the middle to put the gorgonzola with the help of a small spoon. Sprinkle a little oregano on top of the cheese.

Preheat the oven to 190° (heat up and down) and put the burgers in for about 25'. If you want them to brown a little, put only the grill on the top for the last 5'.
