*In the list of ingredients it has not let me put the vegan cheese but any vegan cheese will do, I like grated violife cheese. We cut all the ingredients we want to put in the quesadilla, in my case green bell pepper, chilli and a spring onion. Together all the ingredients with a handful of chickpeas.

I place the first tortilla in a pan (without oil) and put some vegan cheese on it, then I put my vegetable and chickpea mix on top of the cheese and then I put another layer of vegan cheese. Finally I place the second tortilla on top of everything.

I put the heat on, but not too high and watch the bottom tortilla so it doesn't burn. When the bottom cheese has melted I turn the quesadilla over so that it melts on the other side. When you see that more or less all the cheese has melted, remove the quesadilla from the heat and it's ready to eat! 🤤
