Sauté the vegetables with a little EVOO. First onion a few minutes until transparent, brown the garlic, add spinach and sliced mushrooms previously washed. At the same time cook the fresh pasta in boiling water for 8 minutes.

Whisk the two 🥚🥚 in a deep dish, season to taste with salt and pepper, add a handful of melting cheese (mozzarella goes well) and mix in the pan with the vegetables. Drain the pasta, add to the pan and toss everything together over medium heat for a couple more minutes.
