Eggplant and mushroom pie 🍄

Cut the eggplants into slices and soak them for 20 minutes in cold water. Meanwhile preheat the oven.

Sauté the mushrooms with a spoonful of EVOO and salt. Set aside.

In the oven tray, place the dried eggplant and smeared with oil with a brush. Let it cook. You will have to do two batches. You can also grill it.

Tomato sauce: you have the recipe in my profile. I have also put the ingredients so that you can see the total macros.

Assemble: tomato sauce - eggplant - tomato sauce - eggplant, mushrooms, tomato and mozzarella. In the last layer we put only eggplant, tomato and parmesan.
