First of all, I leave here the measures in units, so that there is no loss 🙏 I used fresh chanterelles, but I think this stew can be delicious with any mushroom 😊 This recipe is enough for 6 hearty dishes.

First of all, we select and clean our chanterelles well, to remove any remaining soil. Cut the larger ones into strips and leave the smaller ones whole. The latter is a bit to taste, you can cut them all, I like to see the whole mushrooms if they are small 👍.

We put a pot with a drizzle of oil and add the garlic clove and the chopped onion. Let it cook a little.

Peel and cut the potato and the pumpkin. First, add the potato and let it sauté a little. Then add the pumpkin and the chanterelles.

Once everything is sautéed, add the vegetable broth until it covers the ingredients (poultry broth or water can also be used) and add the spices to taste and the bay leaf.

Let it cook over medium heat. It took me 40 minutes to cook, but the cotton test is that the potato and pumpkin will be soft. and ready to eat! 😋🍲
