Mix all the ingredients until there are no lumps. I have tried using Mercadona ground oatmeal or my protein brand oatmeal. I poured a little less than half of the mixture in a frying pan with a drop of oil. Medium low heat. I moved the pan so that it was all covered with the mixture and homogeneously. When it is set, turn it over.

Add the desired filling. It is best not to use a cheese that is almost all water like mozzarella because it will scatter and water the mixture. I chose Serrano ham and added spices to the mixture.

Once the filling has been added, pour the remaining mixture over the top, spread it to cover the filling completely and cover the pan. When the top begins to set, carefully turn it over. Leave for a few minutes with the fire off.
