Protein savory pancakes with spinach and chickpea flour

Take the mixer bowl and add the spinach, egg whites, chickpea flour and a pinch of salt.

Blend until the spinach is well broken down.

Heat a non-stick frying pan with a little EVOO and add the mixture to make the pancakes. BEWARE! You have to make them with a very low heat because the batter may stick a little to the pan, but keep an eye on the pan at all times.

Once we have them, we add the toppings we want. I have used avocado, tomato and cottage cheese.
