Cut the salmon loin and the cooked octopus leg in portions of similar size.

Assemble the skewers with the fish and the cherry tomatoes (or the vegetable of your choice) and add the chopped garlic and parsley, a dash of EVOO and salt.

Cook on the grill until the salmon is ready (about 5 minutes on each side), as the octopus is cooked and only needs to be marked.
