Prepare the polenta according to package directions. In my case, equal parts milk and water with a little salt. Boil and stir for 10 minutes until the liquid is absorbed. Pour the polenta into a loaf pan or square/rectangular container and let it cool. (I made the polenta the day before for dinner and let the leftovers cool).

Preheat the oven to 220°. Unmold the cooled polenta and cut into potato chip shapes.

Sprinkle with spices to taste and a little EVOO and place on a baking tray with enough space between them.

Bake for about 30 minutes. Take out when they get a little color and serve with a little parmesan cheese on top.
