Roast the whole eggplants with a drizzle of oil at 200 degrees for 45 minutes. Let them cool down to peel them and so that the Mutabal is cold when we are going to eat it.

Mix all ingredients except figs and pomegranate in a food processor. *By ounce of garlic we mean cloves, reduce if you want it less pungent.

The fig and pomegranate is optional but as it has a sweet taste it goes great with the Mutabal. It can be eaten directly with a spoon, with toasted bread or with cucumber strips.
