Fry the onion in EVOO (+salt, black pepper and garlic). Add the zucchini and mushrooms and sauté. Add the rest of the spices and the chopped coriander.

Add a glass of milk, stir, cover and cook for a few minutes.

Add the chickpeas and the 2nd glass of milk. Stir, cover and cook for 8-10 minutes.

Serve with basmati rice (brown, quinoa... whatever you like) and decorate with chopped coriander.
