Cut into pieces and season our chicken with pepper and chicken seasoning (optional) I used breast but you can use the part of the chicken you like the most. Set aside.

We put our pot on the fire with the oil. Add the chopped onion and fry for two minutes. Add the pumpkin, zucchini, peppers (all chopped in pieces) and garlic, the latter crushed or grated, and fry for three minutes stirring occasionally.

Add the chicken breast and fry for a couple of minutes (if you choose other pieces of chicken you can leave it a few more minutes).

Add the crushed tomato and let it fry for a couple of minutes. Add salt, paprika, saffron (if you do not have saffron you can add a little touch of food coloring), mushrooms cut in two and cumin. Add the rice. Stir everything very well and add the broth. I use one part of rice for 4 parts of broth.

Add salt and let it boil. Cover the pressure cooker and when it starts to steam, let it boil for 7 minutes at medium high heat.

Remove the pot from the heat. Here we can remove the air from the pot with the fast button or let it expel it by itself (I used the fast option) open the pot and let it rest for 5 minutes and that's it. Enjoy!
