We put the rice to boil, cut the zucchini into small slices and also put it to boil. (The zucchini aside).

While the rice and zucchini are boiling, cut the tomato and garlic clove into small slices.

In a frying pan add a splash of EVOO and let it simmer until it gets a little hot.

Add the tomato and the garlic clove to the frying pan and stir it a little, raising the temperature of the fire (not too much).

Once the zucchini is boiled we put it in the pan along with the tomato and garlic and continue stirring it.

Once the rice is boiled, we also put it in the pan and let everything mix well.

Once everything is well mixed, add red pepper, pepper and salt to taste.
