Combine eggs, milk, oil and vanilla in a bowl, beat until blended.

Add the dry ingredients, grated coconut and cinnamon (one tablespoon). Stir until there are no lumps and finally add 3 diced apples, leaving the last one to decorate in slices.

Before adding the liquids, heat the oven to 180 °C, add the mixture to your baking pan, preferably oiled or buttered. Bake for 45 minutes (baking time may vary depending on your oven).
