Cut the potato into very thin slices and place them on a plate. Add a splash of EVOO and microwave for about 7 minutes (this is my trick so that they are not hard, some people make them a little in the pan with EVOO and it is true that they are richer but I always look for less calories).

Cut the onion into thin slices and do the same: spread it on a small plate, pour a little oil and cook for about 5 minutes. You will see how it takes a little color.

In a baking dish: pour the fish stock and add the potato slices and the broken onion, covering everything! And let it cook in the preheated oven for about 20 minutes.

Season the sea bream with salt and pepper and leave it ready.

In a bowl put: white wine, a little EVOO, rosemary and dill. Stir everything. A little by eye but I like it with a lot of broth.

When the potatoes and the onion have been 20 minutes in the oven, we take out the container and add the sea bream and pour over the contents of the bowl. Sometimes I put the lemon slices that you can see in the photo (I ask for the cuts at the fishmonger's) and sometimes not. Depending on the day. If you choose to put them in, do it in this step.

Place in the oven for another 20 minutes approximately. I usually put it at 200 degrees, up and down.
