I cooked the potato and sweet potato in a pot for about 15 minutes with skin on. When tender, remove the skin and cut into small squares. Set aside.

Fry the onion in a frying pan with a little EVOO.

Add the potato and sweet potato to the pan with the onion and brown a little. Add a little salt.

Beat the eggs until frothy. In the same bowl, add the potato, sweet potato and onion for about 10 minutes to combine.

Using a ladle, pour half of the batter into a frying pan. Place the provolone cheese on top and pour the rest of the "batter". The idea is that the cheese stays in the center and melts with the heat of the pan.
