Cream of carrot and ginger cream 🥕

To prepare this carrot cream, start by cleaning the onion and carrots. Peel and cut into not very large pieces so that they cook faster.

First sauté the onion with the olive oil and a little salt. Cook over medium heat to make it very tender, but without browning too much. This enhances the sweetness of the onion. Also peel the fresh ginger and chop into pieces to add to the pan.

Cut the carrots into chunks and add them together with the onion and ginger. Cook for 5 more minutes.

Cover with the broth and add the silken tofu. Instead of tofu you can add some kind of vegetable cream to add extra creaminess, but the advantage of adding tofu is that we increase the amount of protein in the final recipe and so it becomes a much more complete dish.

Cook for 20 minutes until the carrot is completely tender. Correct salt and add a little freshly ground pepper. Blend until a very fine cream is obtained.

Serve hot and add a few croutons of bread to decorate, a splash of vegetable cream and a little chopped fresh parsley.
