Fry the onion with a little EVOO and when it is golden brown add the garlic, and then the peppers.

When the vegetables are done add the tomatoes. I use a tetrabrick of sieved tomato or if you prefer add 2 or 3 finely chopped ripe tomatoes. I love the touch of thyme but use whatever you like.

Cut the hake fillets into several pieces and sprinkle with salt and pepper. Then add them to the pan and stir so that everything is integrated. If you want you can add a little water.

I cover and cook for 5 min over medium heat. The time it takes to cook the hake is nothing, but as I accompanied it with potatoes that I made in the air fryer, hence the 20 min approx.
