Wash and clean the vegetables, chop if necessary and wash the jars to be used.

Fill the jars with the chosen vegetables and spices.

Dissolve 2 tablespoons of salt in 400ml of vinegar and 400ml of water and fill the jars up to one finger of the rim.

Close and put in a pressure cooker, cover with water and put on the fire with the pot closed. From the moment it starts to boil, leave between 5 and 10 minutes. Remove from the fire and let it cool inside the pot.

If the vacuum has been correctly made, they can be kept unopened for months. Once cold, they can be consumed, but it is advisable to leave them for a couple of days for the flavor to develop.
