In a frying pan we cook the minced meat while in the oven we cook the eggplants that we have previously sliced.

Add the meat, onion, carrot and mushrooms and add a pinch of salt.

When everything is ready in a dish we make layers: the crushed tomato, eggplant, meat, crushed tomato and cheese and repeat until we make a last layer of eggplant, tomato and cheese (and thyme, optional).

We put in the oven at 200° about 20-25 minutes and it's ready.
