Preparación de la receta

Peel the kiwis (ripe) and cut into 4 pieces. Do the same with the apple.

Wash the lemon well and cut it into 4 pieces (including the peel, this will be removed at the end).

Mix all the fruit (kiwis, lemon, apple and dates) in a pot. Put it on high heat until it comes to a boil, then lower the heat and stir from time to time until it is reduced (between 35 and 45 minutes approx.).

Shortly after half an hour on the fire, add the Chia seeds. If you do not like Chia you can use some neutral gelatin leaves, for these quantities with 6 leaves would be enough.

After 35 to 45 minutes, remove the lemon and blend all the fruit with the blender. Let it reduce for another 3 to 5 minutes.

Now we can pack. We fill glass jars making sure that the lids are in good condition. Vacuum seal the jars in a pot in a bain-marie for at least 15 minutes (never less time).

When finished, remove the jars from the fire and place them upside down on a cloth. When they are completely cool, they can be stored.

Once the jars are opened, I recommend consuming the jam in about 1 week.
