We put a casserole to the fire with 4 spoonfuls of EVOO. Once it is hot, add the finely chopped years. As soon as they begin to brown, add the grated onion and cook for 5 minutes over low heat.

Add the flour and cook for 2-3 minutes, being careful not to let it stick or burn. Add the hot broth and cook for 10 minutes more, stirring from time to time. After the time we add the parsley and mix very well.

We put the hake and mix it with the sauce and move the casserole. Turn them over and stir from time to time. Cover and cook for about 10 minutes over low heat, if we want them more tender they can be cooked longer.
