Preparación de la receta

Wash the eggplants and cut them in half. Steam them until done (I have done them in the GM pot, steam program, 7 min, valve closed). Set aside.

Chop the carrot, celery, onion and tomato (in my case two strokes of turbo in the food processor).

Season the meat with the salt, pepper, oregano and garlic powder. Mix with the chopped vegetables.

Empty the eggplants, chop the pulp and add it to the rest of the mixture.

I cooked it in a slow cooker, 4 hours on high. It can be done in a frying pan with a little EVOO.

Stuff eggplants, put grated cheese on top and grill in the oven or air fryer (8 min. at 180 degrees).
